I really love this time of year. The atmosphere becomes charged with emotions. Everyone you see is planning a celebration of one kind or another. Family come from all corners of the country and outside. We have a great deal to be thankful for. Have you a friend or family member that just overcame a huge obstacle? Maybe a health issue? Be thankful for those that are still with us and thankful, also for the time we had with those loved ones who no longer are with us. Take the time to enjoy your family and friends. Our lives get so frantic and busy that we tend to take them for granted. I’ve included a couple of quick and easy recipes for you this week. We really enjoy snacking every bit as much as the main meal itself, so how about a couple of appetizers? Maybe you will like to try one of these. My family and I enjoy both of these. Here goes, and Happy Thanksgiving!
2 (8 ounce) packages cream cheese
1 (2 ounce) package dried beef, chopped
1 1/2 tablespoons Worcestershire sauce
4 green onions, chopped
1 cup chopped pecans
1/4 cup chopped parsley
Directions: Combine the cream cheese, dried beef, Worcestershire sauce, and green onions, mix well, and refrigerate until chilled.
Mix together the chopped pecans and parsley. Roll cheese into log or ball, and roll in pecans and parsley to cover. Serve with your favorite crackers.
2 (8 ounce) packages cream cheese, softened
3 1/2 cups shredded sharp Cheddar cheese
1 (1 ounce) package Ranch-style dressing mix
2 cups chopped pecans
4 pecan halves
Directions: In a large bowl, mix together cream cheese, Cheddar cheese, and dressing mix. Form into one large ball or two smaller balls. Roll in chopped pecans to coat surface. Decorate the top with pecan halves. Refrigerate for at least 2 hours, or overnight. Serve with your favorite crackers.
