Memorial Day is coming up and that signals the first official day of camping and picnicking. Perhaps you would enjoy a drive around the countryside. Check out to see who has flowers up, who has added on to their house, who has painted or done yard work. Maybe you have been behind one of the vehicles we dubbed “Sunday Drivers”. Try it. Pack a lunch drive around and find a place to stop and eat. Here are a couple of ideas. Pick one or more, and enjoy a ride with your family and have a wonderful time.

“Feed The Neighborhood Sandwich”
1 (1 pound) loaf French bread
2 tablespoons prepared horseradish
1/2 pound thinly sliced roast beef
2 tablespoons prepared mustard
1/2 pound thinly sliced cooked ham
5 slices Swiss cheese
2 tablespoons mayonnaise
1/2 pound thinly sliced cooked turkey
5 slices processed American cheese
1 small onion, thinly sliced
1 tomato, thinly sliced

 Directions: Slice the loaf of French bread HORIZONTALLY into 5 equal layers. Spread bottom layer with horseradish, top with roast beef. Place the next slice of bread over beef, spread with mustard and top with ham and Swiss cheese. Add next slice of bread, spread with mayonnaise and top with turkey and cheese. Add the next slice of bread, spread with more mayonnaise top with tomato and onion. Wrap in plastic wrap and store in the refrigerator or in a cooler until served. You can cut into individual servings before you wrap it or wait until serving. This goes well with a jar of pickles, bag of your favorite potato chips and drinks of your choice. Enjoy!

Super Hero Sandwich
1/2 cup olive oil
1 tablespoon lemon juice
3 tablespoons tarragon vinegar
3 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 teaspoons dried oregano
1/2 teaspoon black pepper
1 cup black olives, chopped
1 cup mushrooms, chopped
1 (1 pound) loaf round, crusty Italian bread
1/2 pound sliced deli turkey meat
1/2 pound sliced ham
1/4 pound sliced salami
1/2 pound sliced mozzarella cheese
6 leaves lettuce
1 tomato, sliced

Directions:    In a medium bowl, combine olive oil, lemon juice, vinegar and garlic. Season with parsley, oregano and pepper. stir in olives and mushrooms. Set aside.
Cut the off top half of the bread. Scoop out the inside, and leave a 1/2 inch outside wall. Spoon 2/3 of the olive mixture into the bottom. Layer with turkey, ham, salami, mozzarella, lettuce and tomato. Pour remaining olive mixture on top, and replace the top half of bread. Wrap securely in plastic wrap, and refrigerate overnight.
It really needs to set up, if not overnight, then make 8-10 hours before serving. When you slice it into wedges, you will see what I mean.
This would go great with a little potato salad, a favorite drink and maybe a cookie to finish the meal.
