Still time to bake a family favorite

    There is still time to make a few last minute things for tomorrow and one of the popular quick breads that often finds its way onto the table is Banana Bread.

The best bread is made from really ripe bananas and usually you can find these at a bargain in a special place in the grocery store.

BANANA BREAD

1 and 3/4 cups SIFTED all-purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/3 cup shortening

2/3 cup granulated sugar

2 eggs, well beaten

1 cup mashed bananas (2 or 3 depending on size)

Sift together the flour, baking powder, baking soda and salt and SET ASIDE TO USE LATER. In a mixing bowl, beat the shortening. Gradually add the sugar, beating until the mixture is light and fluffy. Add the eggs, one at a time, beating well after adding each egg. Add the flour mixture, ALTERNATELY, with the mashed bananas, beginning and ending with the flour mixture and beating well after each addition until smooth. Turn into a well-greased loaf pan that is 8 and 1/2 by 4 and 1/2 by 3 inches. BE SURE AND CHECK THE SIZE OF THE PAN! Bake in a preheated 350 degree oven for about 1 hour and 10 minutes. This makes 1 loaf. The bread should be completely cooled before cutting.
