If I had any thoughts of the Holiday season not being “just around the corner”, that was shelved this weekend.  The cooler weather is definitely a sign of times to come. We also have basketball starting up and various other activities our families are involved in.

I am also looking forward to having my family home from other regions of the State and want to spend as much time as possible visiting and not necessarily in the kitchen. For those reasons, I am sharing a couple of slow-cooker recipes for those days we need a hot meal and are on the road, on the run, or working.

Slow Cooker Italian Beef for Sandwiches
3 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast

    Directions: Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil. Place roast in slow cooker, and pour salad dressing mixture over the meat.
Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

 Slow Cooker Beef Stroganoff
1 Pound cubed beef stew meat
1 (10.75 ounce) can condensed golden mushroom soup
1/2 cup chopped onion
1 envelope of dried beef mushroom soup mix
1 tablespoon Worcestershire sauce
1 soup can of water
4 ounces cream cheese
1/ 2 cup sour cream

    Directions: In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and
water. Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese and sour cream before serving over rice or egg noodles.
