I see that the groundhog saw his shadow and we will have six more weeks of winter. I’m not disappointed. Six weeks of winter sounds pretty good to me. We have gained more than an hour of daylight and the time changes back soon. I am looking forward to it.
I had a note from Lynda in New Hampshire for a dish she prepares for her family nearly every week and one of their favorite desserts. Thank you Lynda!
Bean and Rice Burritos
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
2 teaspoons garlic powder
1 teaspoon ground cumin
2 cups cooked rice
12 flour tortillas (6 inches), warmed
4 ounces process cheese (Velveeta), cut into 12 slices
1 cup (8 ounces) sour cream
Directions: In a large skillet, combine the beans, tomatoes, garlic powder and cumin; heat through. Stir in the rice. Spoon about 1/3 cupful off-center on each tortilla. Top with cheese. Fold sides and ends over filling and roll up. Serve with sour cream. Yield: 6 servings
Apple Berry Streusel Bars
2-1/2 cups plus 2 tablespoons all-purpose flour, divided
2 cups old-fashioned oats
1-1/4 cups sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 cup butter, melted
3 cups thinly sliced peeled tart apples
1 jar (12 ounces) raspberry preserves
1/2 cup finely chopped walnuts
Directions: In a large bowl, combine 2-1/2 cups flour, oats, sugar, baking powder and cinnamon. Beat in butter just until moistened. Set aside 2 cups for topping. Pat remaining oat mixture into a greased 13-in. x 9-in. baking pan. Bake at 375° for 15 minutes. In a large bowl, toss apples with remaining flour; stir in the preserves. Spread over hot crust to within 1/2 in. of edges. Combine nuts and reserved oat mixture; sprinkle over fruit mixture. Bake 30-35 minutes longer or until lightly browned. Cool completely on a wire rack. Cut into bars. Yield: 4 dozen.
