I’m so excited! The Super Bowl is here! For those of you focused on the game, the food is a great opportunity to gather and share while watching a historic game. One of my besties is vegetarian and makes the best stuff without meat — honestly, you would never know it was good for you! This first one is for you, Karen: you can’t have a football party without something spicy with a buffalo flavor.
The next one is one sent in from Kathy in Patten. Kathy tells us that her family likes this one so much, they don’t wait until football season to start bugging her to make it. Of course, she says it’s so easy to make that it doesn’t take much to convince her to make it!

Vegetarian Buffalo Chicken Dip
1 (8-ounce) package seasoned chicken-style vegetarian strips (such as
Morningstar Farms Chik’n Strips), diced
2 (8-ounce) packages reduced fat cream cheese, softened
1 (16-ounce) bottle reduced-fat ranch salad dressing
1 (12-fluid-ounce) bottle hot buffalo wing sauce (such as Frank’s REDHOT
Buffalo Wing Sauce)
1 cup Colby-Monterey Jack cheese blend

    Place the diced vegetarian chicken strips, cream cheese, ranch dressing, and buffalo wing sauce into a slow cooker. Cook on Low, stirring occasionally, until the cheese has melted and the dip is hot, one to two hours. Stir in the shredded cheese and serve.

Chili Dog Casserole
2 (15-ounce) cans chili with beans
1 (16-ounce) package beef frankfurters
10 (8-inch) flour tortillas
1 (8-ounce) package Cheddar cheese, shredded

    Preheat oven to 425 degrees F. Spread one can of chili and beans in the bottom of a 9×13-inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and bean ‘bed.’ Top with remaining can of chili and beans, and sprinkle with cheese. Cover baking dish with aluminum foil, and bake at 425 degrees F for 30 minutes.
