We made it through another winter month. We shoveled ourselves out and went about our business. We get this weather every year. Why are we surprised by it every year? I’m looking forward to browsing through my seed catalogs.

I received a note from Clair in Westbrook. Clair says she had a big “cheat day” on Super Bowl Sunday and is back to eating sensibly. She wanted to share one of her favorite healthy recipes. Thank you, Clair.

Garlic Shrimp Linguine
1 pound uncooked linguine
1 tablespoon butter
3 tablespoons white wine (can substitute chicken stock)
2 teaspoons grated Parmesan cheese
3 cloves garlic, minced
1 teaspoon chopped fresh parsley
1 pinch salt and pepper to taste
1 pound medium shrimp, peeled and deveined

    Directions: Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente; drain. In a medium saucepan, melt butter over medium low heat; add wine, cheese, garlic, parsley and salt and pepper to taste. Simmer over low heat for 3-5 minutes, stirring frequently.
Increase heat to medium high and add shrimp to saucepan; cook for about 3-4 minutes or until shrimp begin to turn pink. Do not overcook.
Divide pasta into portions and spoon sauce on top; garnish with Parmesan cheese and fresh parsley, if desired.

Easy Baked Tilapia
4 (4 ounce) filets tilapia
2 teaspoons butter
1/4 teaspoon Old Bay Seasoning®, or to taste
1/2 teaspoon garlic salt, or to taste
1 lemon, sliced
1 (16-ounce) package frozen cauliflower with broccoli and red pepper

    Directions: Preheat the oven to 375 degrees F.
Grease a 9×13 inch baking dish. Place the tilapia filets in the bottom of the baking dish and dot with butter. Season with Old Bay Seasoning® and garlic salt. Top each one with a slice or two of lemon.
Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.
Cover the dish and bake for 25 to 30 minutes in the preheated oven, until vegetables are tender and fish flakes easily with a fork.
