What a great opportunity to do something nice for the special people in our lives! Valentine’s day gives us that chance. I had a gentleman reader write that he tried one of the chocolate recipes for his wife and she was so surprised and pleased that he wants to try another. Here you are. Try at least one of these. I hope you like the convenience of a boxed mix as much as I do. Let me know what you think.
Chocolate Toffee Cookies
1 (18.25 ounce) package devil’s food cake mix
1/3 cup vegetable oil
2 eggs
3/4 cup coarsely chopped chocolate-covered toffee candy bars
Directions: Preheat the oven to 350 degrees F In a large bowl, combine the cake mix, oil, and eggs beat with an electric beater for 3 to 4 minutes, until well blended. With a spoon, stir in the chopped candy.
Drop by teaspoonfuls 2 inches apart on to greased cookie sheets. Bake for 9 to 11 minutes, or until the cookies are firm. Remove the cookies to a wire rack to cool completely. Makes 2 doz.
Lemon Coolers
1 (18.25 ounce) package lemon cake mix
1 (8 ounce) container frozen whipped topping, thawed
1 egg
2 cups confectioners’ sugar
Directions: Preheat oven to 350 degrees F. Mix together cake mix, whipped topping and egg. Drop by teaspoonfuls into bowl of confectioners’ sugar and coat. Shape into balls.
Bake for 10 to 12 minutes. Do not brown.
Devil’s Food Peanut Butter Chip Cookies
This can be double chocolate by adding chocolate chips instead of peanut
butter chips.
2 eggs
1 teaspoon vanilla extract
2/3 cup shortening
1 (18.25 ounce) package devil’s food cake mix
2 cups peanut butter chips
Direction: Preheat oven to 375 degrees F. In a medium bowl, beat the eggs, vanilla, and shortening with 1/2 of the cake mix until light and fluffy. Mix in the remaining cake mix and the peanut butter chips. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
Bake for 10 to 12 minutes in preheated oven. Remove from cookie sheets to cool on wire racks.
