Happy New Year! I had a request for more slow cooker recipes. I know, after working all day, it sure feels nice to walk through the door and smell something yummy that is nearly ready to serve. Here is a good one for Chicken Pot Pie Stew to be served over buttermilk biscuits or maybe even rice. I also included a recipe for Chicken Nacho Dip. We have the playoffs coming and many of us still have family and friends that stop over for a visit. Serve with crackers or nacho chips. Have a great week!
Chicken Pot Pie Stew
(slow cooker)
4 large skinless, boneless chicken breast halves, cut into cubes
10 medium red potatoes, quartered
1 (8 ounce) package baby carrots
1 cup chopped celery
2 (26 ounce) cans condensed cream of chicken soup
1 15oz can chicken stock
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 (16 ounce) bag frozen mixed vegetables
Directions: Combine the chicken, potatoes, carrots, celery, chicken soup, chicken stock, garlic, and black pepper in a slow cooker; cook on High for 5 hours. Stir the frozen mixed vegetables into the slow cooker, and cook 1 hour more.
Chicken Nacho Dip
(slow cooker)
1 (14 ounce) can diced tomatoes with green chili peppers, drained
1 (1 pound) loaf processed cheese food (such as Velveeta), cubed
2 large cooked skinless, boneless chicken breast halves, shredded
1/3 cup sour cream
1/4 cup diced green onion
1 1/2 tablespoons taco seasoning mix
2 tablespoons minced jalapeno pepper, or to taste (optional)
1 cup black beans, rinsed and drained
Directions: Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook on High, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat.
