Cooking with Susie Q – Week of January 16, 2019

I’ve lived in the area all my life and I haven’t gotten used to, nor enjoy the colder weather.  That’s the only observation I am sharing with you today. We had a letter from Mindy asking for a couple of low fat, low sugar desserts.  Mindy says that she is trying to eat better but can’t give up sweets. I have a couple for you Mindy and I hope many of you try one of these.  Stay warm!

Toffee Crunch Dessert

1-1/2 cups cold fat-free milk

1 package (1 ounce) sugar-free instant vanilla pudding mix

2 cartons (8 ounces each) frozen fat-free whipped topping, thawed

1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes

4 Butterfinger candy bars (2.1 ounces each), crushed

Directions: In a large bowl, whisk milk and pudding mix two minutes. Let stand for two minutes or until soft-set. Stir in two cups whipped topping. Fold in remaining whipped topping. In a 13×9-in. dish coated with cooking spray, layer half of cake cubes, pudding mixture and crushed candy bars. Repeat layers. Cover and refrigerate at least 2 hours before serving. (3/4 cup equals 177 calories, 3 g fat)

 Cream Cheese Streusel Bars

1-1/4 cups confectioners’ sugar

1 cup all-purpose flour

1/3 cup baking cocoa

1/4 teaspoon salt

1/2 cup cold butter

1 package (8 ounces) reduced-fat cream cheese

1 can (14 ounces) fat-free sweetened condensed milk

1 egg, lightly beaten

2 teaspoons vanilla extract

Directions: In a large bowl, combine the confectioners’ sugar, flour, cocoa and salt; cut in butter until crumbly. Set aside 1/2 cup for topping; press remaining crumb mixture into an 11-in. x 7-in. baking pan coated with cooking spray. Bake at 325 degrees for 8-12 minutes or until set. In a small bowl, beat the cream cheese, milk, egg and vanilla until blended. Pour over crust. Bake for 15 minutes. Top with reserved crumb mixture; bake 5-10 minutes longer or until filling is set. Cool on a wire rack. Store in the refrigerator. (1 bar equals 245 calories, 10 g fat.)
