Cooking with Susie Q – week of January 24, 2018

We had some great football to watch, we also have game nights and movie nights. All great opportunities for gatherings of family and friends. All calling for snacks. All good times.  Here are a couple of our family favorites.  I need your help.  

With the Superbowl coming, I wanted to have a couple of recipes that aren’t a wing recipe or a spinach dip.  Both are great, but we need to try something new in addition to our past favorites,  Thank you in advance.  Have a great week!

Pizza Dip

1 (8 ounce) package cream cheese, softened

1/2 teaspoon dried oregano

1/2 teaspoon dried parsley

1/4 teaspoon dried basil

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup pizza sauce

2 tablespoons chopped green bell pepper

2 ounces pepperoni sausage, chopped

2 tablespoons sliced black olives

Directions: In a small bowl, mix together the cream cheese, oregano, parsley, and basil. Spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. Sprinkle 1/2 cup of the mozzarella cheese and 1/2 cup of the Parmesan cheese on top of the cream cheese mixture. Spread the pizza sauce over all. Sprinkle with remaining cheese, then top with green pepper, pepperoni and olive slices. Cover, and microwave for 5 minute, or bake at 350 degrees for 20-25 mins, serve hot.

Hot Crab Dip

8 ounces cream cheese, softened

1 Cup sour cream

1 small onion, finely chopped

5 tablespoons mayonnaise

2 (6 ounce) cans crabmeat, drained and flaked

1/8 teaspoon garlic powder

1 Tablespoon Old Bay Seasoning

salt and pepper to taste

1 (1 pound) loaf round, crusty  bread

Directions: Preheat oven to 350 degrees F. In a medium bowl, combine the cream cheese, onion, mayonnaise, crabmeat, garlic powder, salt and pepper. Spread mixture into a 1 quart baking dish. Bake for 20 minutes in the preheated oven. While the dip is baking, cut a circle in the top of the bread, andscoop out the inside to create a bread bowl. Tear the removed bread into pieces for dipping. Remove baked crab dip from the oven, and stir well.

Spoon the mixture into the hollowed out loaf. Place bread bowl and chunks of bread on a medium baking sheet, and bake for an additional 10 minutes. Serve hot.
