The Maine Agri Women recently held a cooking contest using fresh Maine potatoes during the 61st Potato Blossom Festival. The cooking contest seeks to promote and bring attention to different ways potatoes can be used in breads, casseroles, desserts, salads, soups, and appetizers. Winners were judged on appearance of the dish, texture, ease of preparation, and flavor. Winners received $25 for first place, $15 for second place, and $150 for the overall winner.
First-place winners were: Rita Bisht, appetizers; Priscilla Dobson, bread; Roxanne Poole, casseroles; Abigale Poole, desserts; and Roxanne Poole, soups. Second-place winners were: Steve Callionas, appetizers; Whitney McNamee, breads; Debra Tibbits, casseroles; Priscilla Dobson, soups; and Mary Otis, desserts. The overall winner was Roxanne Poole, Seafood Potato Chowder.
1 lobster, steamed
1 pound scallops, steamed
8 cups peeled and cubed Maine potatoes
1 stick butter
1 grated carrot
1 chopped onion
3 cups of milk

1 cup whipping cream
1 cup Parmesan cheese
1 stick butter
In large pot: Melt 1 stick of butter. Add 1 chopped onion to sauté.
Add 1 grated carrot and 8 cups Maine peeled, cubed potatoes. Cook together over low heat for 5 minutes. Next, add 3 cups of milk, 1 teaspoon salt, and a dash of pepper. Cook until potatoes are tender.
While potatoes are cooking: Melt 1 stick of butter in small saucepan. Add 1 cup heavy cream, then 1 cup of Parmesan cheese, stirring so there are no clumps. Next, add chunked lobster, scallops and Parmesan sauce to your pot of soup; stir and enjoy!
