I had a couple of requests for recipes using zucchini.  It would seem our gardens are growing very well this year.  If you have a recipe using your garden’s bounty, send it in to us.  Have a great week!

Zucchini Casserole
6 cups diced zucchini
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
1/2 cup chopped onion
1 cup shredded carrots
1 (6 ounce) package dry bread stuffing mix
1/2 cup butter, melted

    Directions: Preheat oven to 350 degrees F. Grease a 2 quart casserole dish. In a large saucepan over medium-high heat, cook zucchini in lightly salted water until crisp-tender, about 5 minutes. Drain, and place in a large bowl. Stir in the condensed soup, sour cream, onion, and carrots. In a small bowl, mix together stuffing and melted butter. Spread half of the stuffing mixture in the bottom of the casserole dish, add a layer of the zucchini mixture, and top with remaining stuffing mixture. Bake for 20 minutes in the preheated oven, or until the top is golden brown.

Zucchini Brownies
2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups shredded zucchini
2 tablespoons white sugar
1 cup chopped walnuts
(optional)
1 cup chocolate chips

    Directions: Preheat an oven to 350 degrees F. Grease a jelly roll pan. Sift flour, cocoa powder, baking soda, and salt together in a bowl. Beat the butter and 1 1/2 cups sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the zucchini; mixing just enough to evenly combine. Pour mixture into prepared pan. Sprinkle the remaining 2 tablespoons sugar, chocolate chips, and walnuts on top. Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, 25 to 30 minutes.
