We heard from Nancy this week. Nancy sent in her favorite recipe for granola bars. She says she makes them for her family’s lunches and snacks. This being January, and the many of us attempting to eat better to atone for our excesses these past few months, these sound great! Nancy tells us you can
use whatever combination of dried fruits and nuts you have on hand. We also included a recipe for slow cooker chicken nacho dip. We, supporters of the Patriots, are another step closer to the Super Bowl and I want us to be ready!
Easy Granola Bars
2 cups quick-cooking oats
1 cup old-fashioned oats
1/2 cup hulled pumpkin seeds
1/2 cup slivered almonds
1 cup mixed nuts
1 cup dried cranberries
1 (14 ounce) can sweetened condensed milk
Directions: Preheat an oven to 350 degrees F. Line a 13×9-inch pan with lightly-greased parchment paper; an inch or so of parchment paper should stick up on 2 sides to form lifting handles. Mix the quick-cooking oats, old-fashioned oats, pumpkin seeds, almonds, mixed nuts, cranberries, and sweetened condensed milk together in a bowl; spread into the prepared pan, evenly pressing into the corners and out to the sides. Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars. Allow the bars to cool for 5 minutes in the pan before using the parchment paper to lift them from the pan. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.
Chicken Nacho Dip
(slow cooker)
1 (14 ounce) can diced
tomatoes with green chili
peppers, drained
1 (1 pound) loaf processed cheese food (such as Velveeta), cubed
2 large cooked skinless,
boneless chicken breast halves, shredded
1/3 cup sour cream
1/4 cup diced green onion
1 1/2 tablespoons taco
seasoning mix
2 tablespoons minced jalapeno pepper, or to taste (optional)
1 cup black beans, rinsed and drained
Directions: Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook on High, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat.
