Cooking with Susie Q-Dieters pumpkin pie & pumpkin fudge

I have several friends who are successfully losing weight. On purpose. For these girls I have included a recipe for a pumpkin pie as a treat for their football games or just a sweet with a “cheat” feel. You look great Ladies! Have a great week and hope you all had a safe and happy Halloween!

 

Dieters Pumpkin Pie

1 (15 ounce) can pumpkin puree

1/2 cup skim milk

1 (1 ounce) package instant sugar-free vanilla pudding mix

1 teaspoon pumpkin pie spice

1 (8 ounce) container fat free frozen whipped topping

Directions: In a medium bowl, mix together the pumpkin, milk, and instant pudding mix. Stir in the pumpkin pie spice, and fold in half of the whipped topping. Pour into an 8-inch pie plate, and spread remaining whipped topping over the top. Chill for 1 hour, or until set.

 

Pumpkin Fudge

2 tablespoons butter

2 1/2 cups white sugar

2/3 cup evaporated milk

1 cup white chocolate chips

7 ounces marshmallow creme

3/4 cup canned pumpkin

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Directions: Line a 9×9 inch pan with aluminum foil, and set aside. In a 3 quart saucepan, heat milk and sugar over medium heat. Bring to a boil, stirring occasionally with a wooden spoon.

Mix in pumpkin puree and cinnamon; bring back to a boil. Stir in marshmallow creme and butter. Bring to a rolling boil. Cook, stirring occasionally, for 18 minutes.

Remove from heat, and add white chocolate chips and vanilla. Stir until creamy and all chips are melted. Pour into prepared pan. Cool, remove from pan, and cut into squares. Store in a cool, dry place.
